I have some questions, do you have any recommendations for making this vegetarian, aka what would taste good in place of sausage? also, instead of using veggie broth, can I just use water? also, where would I find mature arugula? also how do you warm a bowl?
great questions! I personally wouldn't use water - the broth is really central to the flavor BUT you can definitely use veggie broth or get a vegetable bouillon and use water with that. Ignore the mature arugula thing, that's weird, I just use the standard arugula like you'd buy at the supermarket. As far as a sub for sausage, I think a veggie sausage could be good or even better veggie ground beef sub. This may be weird, but you could add some squash after the onions cook for a little bit and season with some sausage-like spices - smoked paprika, sage, caraway seeds. I'd add some garlic as well. Cherry tomatoes are good with this too! I think not including the sausage it's crucial to have a broth to really carry the flavor. Ignore the warm bowl thing lol
